In 1999, the “Larkburger” was first featured on the menu at renowned chef Thomas Salamunovich’s fine dining Larkspur Restaurant in Vail, Colorado. Overwhelmed by many years of popular response to the “Larkburger,” Thomas recognized that a perfectly prepared, all-natural gourmet burger would be appreciated beyond Vail – so in 2006, Larkburger, the restaurant, was born. A quick-casual eatery seemed just the right format to serve this all-American favorite, but with the hallmarks of a fine dining chef committed to natural, impeccably chosen ingredients and a love of truffles.
The first Larkburger location opened in Edwards, Colorado and has been quickly followed by restaurants in Boulder and Denver. The Fort Collins Larkburger opened in mid-August 2010 and there are more locations on the way.
