Nachos
We start with a pile of light, crispy tortilla chips fried in trans- fat free oil, and then drizzle them with vegetarian green chili. Then we smother them under a blend of Monterey jack and cheddar cheeses and bake them to perfection. Overall: I love the pizza at Beau Jo's...plus they give you honey to dip the crust in. You have plenty of choices of crust, toppings as well as other food choices besides pizza.

Overall: I don't understand the excitement over Beau Jo's. There are dozens of better pizza restaurants in town. The location in Idaho Springs has a lot of character, but the Colorado Blvd location is a bland wooden structure.
